Job Description:

As a Pastry Line Manager within Bakery & Pastry, you will be responsible for all aspects of bakery and pastry production with a primary focus on the commissioning and management of the new pastry lines, bakery and pastry production, staffing, forecasting, preparation, productivity and quality control. Additionally, you will be responsible for improving the culinary quality standards of the new QACC production, including safe food production in accordance with HACCP standards.

 

Accountabilities:

  • Lead the installation and commissioning of the new pastry line, including factory acceptance test and engagement with all suppliers.
  • Develop a training framework of staff on how to operate the new production line.
  • Drive the development and implementation of SOPs required to operate equipment and production line.
  • Facilitate, educate, motivate, coach, counsel and guide the production group to ensure that they have the ability to deliver results.
  • Oversee menu/product development for new products to showcase during presentation to customer.
  • Manage and develop production systems to ensure increased productivity, quality, food safety and lower costs.
  • Ensure the cost-effective utilization of staff and equipment.
  • Actively analyses and verifies production waste reports to minimize food variance.
  • Analyze food cost variance reports provided by finance to identify gaps in production, ordering and invoicing.
  • Frequently review quality of purchased goods is in line with product specifications.
  • Focus on current operational performance and develop/implement processes, procedures, systems, metrics and reporting to support, improve and innovate manufacturing business.
  • Maintain effective relations with other management team (e.g. Material Control, Supply Chain, Stores & Receiving, QA & Hygiene, and Maintenance).
  • Assure the timely delivery of the department’s services via forecasting and planning of labour requirements.
  • Oversee the work of chefs, cooks and other kitchen employees to assure that food production costs are within budget.
  • Prepare the department’s annual budget including all functionalities, overhead and operational.

Qualifications

An ideal candidate will meet below qualifications and experience: 

  • Bachelor’s Degree or Equivalent
  • Minimum 8 years of relevant experience in product development role

Essential:

  • Proficient computer skills, especially in Excel
  • Good spoken and written English
  • Ability to communicate on various levels to include management, customers, client, and associate 
  • Proficient in menu development and cost controls
  • Ability to perform various moto skills such as; lifting, reaching, bending, twisting, pushing, pulling, squatting, grasping, and arm-hand coordination on a continuous basis.
  • Culinary creativity and menu writing abilities
  • Managerial skills

Preferred:

  • Good knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation knowledge of P&L accountability and contract-managed service experience
